Tamarind Chutney

Ingredients

  • ½ cup pitted dates
  • 1 ½ cup hot water
  • ¼ cup tamarind purée or half the amount tamarind paste, which is less watery and more concentrated in flavor
  • 1 teaspoon ground cumin
  • 1 small knob ginger
  • ¼ to ½ teaspoon hot chili powder
  • ½ teaspoon salt

Instructions

  • Soak the dates in hot water for 20 minutes until completely soft.
  • In a blender, add the dates and soaking liquid, tamarind, cumin, ginger, chili and salt.
  • Blend until totally smooth.
  • Pour into a small saucepan and simmer until thickened and reduced to about half (more or less depending on preferred concentration).
  • Allow to cool and serve as an accompaniment to anything you wish!
  • Store for a week in the fridge.
