Soak the dates in hot water for 20 minutes until completely soft.
In a blender, add the dates and soaking liquid, tamarind, cumin, ginger, chili and salt.
Blend until totally smooth.
Pour into a small saucepan and simmer until thickened and reduced to about half (more or less depending on preferred concentration).
Allow to cool and serve as an accompaniment to anything you wish!
Store for a week in the fridge.
