Strawberry Cardamom Thumbprint Cookies

Ingredients

  • cup 70 grams almond flour
  • cup 45 grams tapioca flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla
  • ¼ teaspoon ground cardamom
  • 6 teaspoons strawberry jam (or jelly/jam of choice — honestly I can’t think of a flavor that wouldn’t go with this cookie base!

Instructions

  • Combine everything, but the jam, until a dough forms.
  • Roll dough into balls. Flatten each ball and create a little well in the middle.
  • Fill each well with jam.
  • Bake for 10-12 minutes at 350 degrees until the bottoms begins to brown. Let cool and enjoy!
