Snacky Energy Oat Balls

Ingredients

  • 2 cups old fashioned oats
  • 1 cup shredded coconut
  • 1 cup flax meal
  • 1 cup raisins or mini chocolate chips
  • 1 tablespoon vanilla
  • 1 cup sunflower seed butter
  • cup date syrup or raw honey (or maple for a lower glycemic index)

Instructions

  • Mix all the dry ingredient together first, then add in the wet ingredients.
  • Continue to mix until well incorporated (hands are the best tool for this!!).
  • Roll into 1-2 inch balls.
  • Store in fridge and enjoy within a week (or pop in the freezer and enjoy over the next several months).
