Pumpkin Seed Energy Balls
Packed with iron and fiber, these pumpkin seed energy balls are an easy snack during the week.
- ¾ cup pumpkin seeds
- ½ cup coconut flakes
- ½ cup raisins
- ½ teaspoon cinnamon
- ¼ teaspoon salt, omit if pumpkin seeds are salted
Place pumpkin seeds and coconut flakes in a food processor and pulse until coarsely ground.
Add raisins, cinnamon, and salt (if using) and continue to process until the mixture comes together. You'll know it's ready when the mixture sticks together when you press it between your fingers.
Grab the mixture by the tablespoonful, and squeeze and roll into balls.
Store in the fridge and enjoy over the course of the next week.
