Preheat the oven to 325°.
In a large bowl, mix the dry ingredients together.
In a smaller bowl, whisk together the coconut oil and maple, and then pour this liquid over the dry ingredients.
Stir everything together until the oats and seeds are well coated.
Pour the oat mixture onto a large parchment lined baking tray, spreading evenly. For an extra chunky result, make sure the oat mixture is not so spread that the oats aren't touching each other. Having the oats touch with the combo of oil and maple will make for some chunky, crunchy granola in the end.
Bake for 20 to 30 minutes, until the granola starts to look golden.
Pull baking sheet from the oven and allow to cool completely before breaking apart the granola.
Store in an air tight container in the fridge for several weeks (if you can make it last that long -- it's so yummy!!)
