Paleo Cookie Dough Bites

Who doesn't love cookie dough? This paleo, vegan version is safe and delicious and will actually keep your hunger at bay.

Ingredients

  • ½ cup almond butter
  • ¼ cup coconut oil, softened
  • 1 tablespoons maple syrup
  • ½ teaspoon vanilla
  • ¼ teaspoon salt (omit if your almond butter already has salt)
  • 1 ½ cup almond flour
  • 3 tablespoons maca powder (optional)
  • ½ cup chocolate chips (I prefer coconut sugar sweetened)

Instructions

  • Combine the almond butter, almond flour, coconut oil, maple syrup, and salt (and maca powder if using) until a dough forms.
  • Fold in chocolate chips until well incorporated.
  • Roll into 1" balls and chill until firm enough to hold. I have had them both when they're slightly firm, and completely chilled -- both are great!

Notes

A fun addition would be when the cookie dough bites are firm, to dip these in chocolate. Dip each one in melted chocolate and line on wax paper or a silicone mat. Put back in fridge to set up. And then snack away on these delish cookie dough bites!
