Line a couple baking sheets with parchment paper, and set aside.
Place the oats in a large bowl and set aside.
In a small pot, add the coconut oil, coconut sugar, milk, and cacao powder.
Heat on medium, stirring frequently making sure everything gets melty and combined.
Allow this to boil for a minute, while continuing to stir.
Remove from the heat, and add the cashew butter, vanilla, and salt (optional) and stir once more until smooth.
Pour the chocolate mixture over the oats and get mixing! Mix until every single oat is covered with the chocolate.
Now, scoop and plop 1-2 tablespoon sized drops onto the parchement paper until the oaty-choco mixture is gone.
Cool in the fridge until firm, and enjoy!
