Morning Sunrise Popsicles

Ingredients

Strawberry Layer

  • 1 cup strawberries
  • ¼ cup maple syrup

Mango Layer

  • 1 cup mango
  • ¼ cup maple syrup
  • ½ cup nondairy milk (Forager's cashew yogurt is what I use)

Instructions

Strawberry Layer

  • Blend together strawberries and maple syrup until smooth.
  • Pour half way into popsicle molds or cups and set aside.

Mango Layer

  • Blend together mangos, maple syrup, and yogurt until smooth.
  • Fill the remaining space in popsicle molds with mango layer.

Swirl

  • With a popsicle stick, gently swirl the two layers until you can see the colors blend into one another where the red meets yellow. If you are using a mold or cup that isn't transparent, just swirl gently for about 30 seconds. If the colors don't end up blending together as you hoped, don't worry. It will still taste great!
  • Place filled molds/cups in freezer and freeze several hours or overnight until firm.
  • Pop 'em out of the molds (I use hot water to loosen mine), and enjoy!
