Smooth as can be, this raw, vegan cashew date caramel is as good for you as it is tasty!

Ingredients
1cupdates, soaked for 15 minutes in boiling water (or until soft) and drained
½cupraw cashews, soaked overnight or in boiling water for 15 minutes, and drained
1teaspoonvanilla
½teaspoonsalt
½ to 1cupwater (to thin out the caramel while blending)
Instructions
Place dates, cashews, vanilla, and salt in blender along with ¼ cup of the water to get started. Begin blending.
Gradually add more water between blending and scraping down the sides of the blender to keep things moving and get all the ingredients well incorporated and completely smooth. You may not use all of the water, depending on how dry or soft your dates originally were.
Once smooth, transfer to a container and enjoy as a dip for fruit, frosted on top of brownies, dolloped on pancakes, and more!
