Avocado Chocolate Pudding

Ingredients

  • 2 large avocados or 3 small avocados
  • ¼ cup raw cashews, soaked for 10 minutes in hot water or overnight in room temp water
  • cup cacao powder
  • ¼ cup maple syrup
  • 1 tablespoon vanilla
  • pinch of salt

Instructions

  • In a high-speed blender, add avocado, raw cashews, cacao, maple, vanilla, and salt.
  • Blend until completely smooth. This may take a little time but feel free to add 1-2 tablespoons of water if things aren't getting smooth as can be. You shouldn't see any flecks of cashews.
  • Pour into a glass container and pop in the fridge for several hours until complete chilled.
  • Serve by the heaping spoonful and enjoy!
