Ingredients

  • 1 cup red lentils, soaked overnight and rinsed until water is clear
  • 1 large onion
  • 5 cloves of garlic
  • 1 large sweet potato
  • 2 red bell peppers
  • 1 can diced tomatoes
  • 2 cups water (3 cups if you don’t soak your lentils)
  • cup chili powder (or to spice preference)
  • 1 can full fat coconut milk
  • 1/4 c Thai red or massaman curry paste (check out your local Asian grocery for this!!)
  • Salt and pepper to taste
  • Cilantro to garnish

Instructions

  • Add ingredients, except salt and cilantro, to the crockpot with lentils at the bottom.
  • Gently stir the top ingredients only.
  • Cook on high until cooked through (about 4-5 hours).
  • Add salt to taste.
  • Garnish with cilantro. Serve and faint with delight!
