Ingredients

cup
red lentils, soaked overnight and rinsed until water is clear

large onion
5
cloves
of garlic
1
large sweet potato
2
red bell peppers
1
can diced tomatoes
2
cups
water (3 cups if you don’t soak your lentils)
⅛
cup
chili powder (or to spice preference)
1
can full fat coconut milk
1/4
c
Thai red or massaman curry paste (check out your local Asian grocery for this!!)
Salt and pepper to taste
Cilantro to garnish
Instructions
Add ingredients, except salt and cilantro, to the crockpot with lentils at the bottom.
Gently stir the top ingredients only.
Cook on high until cooked through (about 4-5 hours).
Add salt to taste.
Garnish with cilantro. Serve and faint with delight!
