These TAHINI CARDAMOM OAT FUDGE BARS are winners because they got the flav you crave AND they helped me use up some almost-gonna-expire tahini. Honestly, that was the real motivator for making these.
As you can see from some previous posts, I think tahini and cardamom go nicely together! The sweet warmth of cardamom pairs so well with the nutty, slightly bitter tahini!

Tahini Cardamom Oat Fudge Bars
Ingredients
Oat Layer
- 2/3 cup tahini
- 1/3 cup maple syrup
- 2 cups oats
- 1/2 cup oat flour
- 1/2 cup almond flour
- 1/4 teaspoon ground cardamom
- Pinch of salt
Fudge Layer
- 1/4 cup coconut milk
- 2 tablespoons tahini
- 1 cup chocolate chips (sweetened to your preference)
Instructions
Oat Layer
- In a bowl, combine tahini and maple syrup until smooth.
- Add in cardamom and salt and incorporate well.
- Add in the remaining dry ingredients and combine until everything is well combined.
- In a parchment lined loaf pan, press half the oat mixture until flattened evenly. Set aside.
Fudge Layer
- In a heatproof bowl, stir together the coconut milk and tahini. Add in chocolate chips.
- Melt these ingredients in a microwave or using the double boiler method. If using a microwave, heat in 30 second intervals stirring each time, until chocolate is melted into the milky tahini.
- Once combined, allow mixture to cool to a thickened, spreadable consistency (kinda like grind-your-own almond butter at the grocery store). x
- Plop and press the fudge layer onto the oat mixture until even.
- Add the remaining oat mixture on top of the chocolate and press that evenly.
- Place in fridge until firm, then cut into bars or squares. Enjoy!
- Store in fridge for a week or in the freezer to last a few months!
