I adore this SWEET SPICY RED LENTIL SOUP!! I guess it’s more of a stew. I don’t know. But I’ve been making it for over a decade and when chilly weather comes, this always hits.
It’s a fusion of indian and thai vibes and is a total comfort in our home. I love it and hope you try it out!
PSA: Rinse your red lentils. Always. Added bonus if you soak them ahead of time as well! It’s best practice to optimize their nutritional value. It’ll help with toots too.
Ingredients
- 1 cup red lentils, soaked overnight and rinsed until water is clear
- 1 large onion
- 5 cloves of garlic
- 1 large sweet potato
- 2 red bell peppers
- 1 can diced tomatoes
- 2 cups water (3 cups if you don’t soak your lentils)
- ⅛ cup chili powder (or to spice preference)
- 1 can full fat coconut milk
- 1/4 c Thai red or massaman curry paste (check out your local Asian grocery for this!!)
- Salt and pepper to taste
- Cilantro to garnish
Instructions
- Add ingredients, except salt and cilantro, to the crockpot with lentils at the bottom.
- Gently stir the top ingredients only.
- Cook on high until cooked through (about 4-5 hours).
- Add salt to taste.
- Garnish with cilantro. Serve and faint with delight!
