When the strawberries are so red they could burst, you gotta make them the main feature. Like with these strawberry studded yogurt pops!
With hood strawberry season winding down in the PNW, I am savoring the flavor as much as possible and these pops are one (easy!!) way to do it.
PS… if you don’t have sweet-as-candy strawberries available to you, no fret! Just macerate your berries in some coconut sugar beforehand to bring out the flavor and enhance their sweetness.
Strawberry Studded Yogurt Pops
Ingredients
- Juicy, sweet strawberries to fill your popsicle mold
- 1 part nondairy yogurt
- ½ part maple syrup
- Dash of vanilla extract (or half dash of vanilla powder ‘cause it’s more potent, to taste)
Instructions
- Fill popsicle molds with destemmed strawberries
- Combine yogurt, maple syrup, and vanilla.
- Spoon yogurt mixture into molds.
- With a knife or popsicle stick, gently smash the berries and yogurt together — allowing chunks to remain.
- Add popsicle sticks and freeze for several hours or overnight.
- Remove from molds and enjoy!
