What is coconola you ask? Coconola is just a cute name for a type of paleo granola. It uses coconut flakes instead of oats. Not that I have anything against oats — but sometimes you just want a little something different on top of your oatmeal other than more oats.
If my nose had lips it would smile at the smell of cardamom. It’s so wonderful and warming. And then when you pair it with the bright sweetness of strawberry, you’ve reached a new level of delish.
That, my friends, is the magic this Strawberry Cardamom Coconola encapsulates!
When you pair coconut flakes with a little sweetness and oil and then bake it you’ve got yourself a very pleasant crunch situation going on.
On top of that, this coconola packs in the protein with cashews (a fitting mate for coconut), almond flour, chia seeds, and sesame seeds!
And do I need to remind you again of the star of this show? CARDAMOM! Don’t be fooled by the small amount added to the mix — a little goes a long way and makes this extra special. And lest you forget its duet partner strawberry — it will remind you with all its sweetness.
This pairs well with anything you usually top with granola or just plain by itself as a crunch snack!
Strawberry Cardamom Coconola
Ingredients
- 3 cups coconut flakes
- 1 cup raw cashews
- 1 cup almond flour
- ⅓ cup sesame seeds
- ¼ cup chia seeds
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cardamom
- ½ cup pure maple syrup
- ¼ cup coconut oil, melted
- ½ cup freeze dried strawberries
Instructions
- Preheat oven to 300 degrees and line a large baking sheet with parchment paper.
- In a large bowl, mix together the dry ingredients, and in a smaller bowl, combine the melted coconut oil and maple syrup.
- Add the liquid ingredients to the dry and combine well.
- Spread the mixture on baking sheet and pop in the oven for 20-25 minutes (until golden).
- Once baked, allow to cool completely. Then break up the pieces and add freeze dried strawberries and stir together.
