There are days when I just don’t make time or have the energy to prepare a substantial snack to tide me over until my next meal. Does that happen to you? Or back in my days of feeding my baby the precious liquid gold pouring forth from my bosom, I was a munch machine. Whatever the case, having a quick bite to pop in your mouth is always a good idea. And that’s why I like these snacky energy oat balls! I know the name needs work, but it just encapsulates their essence so well. It’s been a go-to in my household for years now.
The main ingredient on these oat balls, as you can see from the title, is oats. Glorious oats. My faithful, fibrous friend for all these years. Oats are a great source of fiber and help keep blood sugar levels regulated. Stick to less processed oats for the maximum benefit (although for this recipe, don’t use steel cut oats otherwise you’ll have a very crunchy situation at hand).
I don’t naturally gravitate towards commercial protein powders (you’ll see the same pattern in my cookie dough bites), so for these balls I like to use sunflower butter, as it has a decent amount of protein. I use flax meal for the same proteiny reason — plus fiber! The fatty goodness from coconut and sunflower butter along with the protein and fiber from the other ingredients all help with keeping you feeling full until your next installment of a meal.
Snacky Energy Oat Balls
Ingredients
- 2 cups old fashioned oats
- 1 cup shredded coconut
- 1 cup flax meal
- 1 cup raisins or mini chocolate chips
- 1 tablespoon vanilla
- 1 cup sunflower seed butter
- ⅔ cup date syrup or raw honey (or maple for a lower glycemic index)
Instructions
- Mix all the dry ingredient together first, then add in the wet ingredients.
- Continue to mix until well incorporated (hands are the best tool for this!!).
- Roll into 1-2 inch balls.
- Store in fridge and enjoy within a week (or pop in the freezer and enjoy over the next several months).
