Sometimes you just need to do your body a favor. And with these easy pumpkin seed energy balls, you’ll be doing just that! Packed with protein, iron, and fiber, these are an easy, tasty snack to munch on throughout your week.

These balls come together rather quickly and have been a favorite of my kiddo as well. Sweet and slightly spiced with cinnamon. And, I don’t know how, but these taste buttery to me! I know, so weird. I’m confused too. Maybe the coconut flakes breaking down release some oil making it buttery? Or could it be that because I live without cow dairy, I’ve forgetten what buttery goodness is? Whatever it is, it jogs my memory of butteriness and it works.
I recommend getting some high quality pumpkin seeds that ideally have been sprouted to unlock the best nutrition and flavor. In addition to pumpkin seeds, these have coconut and raisins which add some serious fiber. This is a great thing to add to your eating habits when you are backed up, if you know what I mean.
Limit Servings of Pumpkin Seed Energy Balls
Do not, I repeat DO NOT, eat more than a few of these energy balls in a sitting — because if you overload yourself with raisins, you will be hanging out at the lieu. Raisins are great — a wonderful addition to anything, but take it from someone who has had one too many dried fruits in one sitting. The after-party is no fun. Because of the high amount of raisins in these, it best that you use these as a snack — not to fill your belly. Everything in moderation, right?
Aside from the warning (sorry, enneagram 6 over here), I encourage you to try these out! They are really simple and a delicious, healthful snack to have on hand for you and your people.
Pumpkin Seed Energy Balls
Ingredients
- ¾ cup pumpkin seeds
- ½ cup coconut flakes
- ½ cup raisins
- ½ teaspoon cinnamon
- ¼ teaspoon salt, omit if pumpkin seeds are salted
Instructions
- Place pumpkin seeds and coconut flakes in a food processor and pulse until coarsely ground.
- Add raisins, cinnamon, and salt (if using) and continue to process until the mixture comes together. You'll know it's ready when the mixture sticks together when you press it between your fingers.
- Grab the mixture by the tablespoonful, and squeeze and roll into balls.
- Store in the fridge and enjoy over the course of the next week.
