With October being more than halfway over, I thought it was high time to share a recipe that celebrates pumpkin. But not in a pumpkin spice kinda way– in a seedy way! Say hello to PUMPKIN HEMP SEED GRANOLA!
First off, those that can’t have nuts — REJOICE! There are no nuts here, only seeds! But it’s still quite crunchy and munchy! It’s similar to this popular store-bought version, however, it’s less overwhelmingly sweet and has a lower glycemic index using maple syrup. But don’t let that fool you. This has the flavor factor for sure — plus it’s a bit more filling with more fiber and protein than your average granola!
Just start with some oats, pumpkin seeds, and hemp hearts. Then add your coconut oil and maple, along with cinnamon and salt. Bake, cool, and CRUNCH!! That’s it!
It’s so easy and so tasty. Make a batch or two of this pumpkin hemp seed granola and enjoy your own homemade granola that you can be proud of!
I like to use this granola (or this paleo one) on oatmeal, chia pudding, or just eat it straight! I bet this would be good on a smoothie bowl or ice cream too. Yum!
Pumpkin Hemp Seed Granola
Ingredients
- 3 cups rolled oats
- 1 ½ cups pumpkin seeds, shelled (aka pepitas)
- 1 cup hemp seeds, shelled (aka hemp hearts)
- ½ cup coconut oil, melted
- ½ cup maple syrup
- 2 teaspoons ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat the oven to 325°.
- In a large bowl, mix the dry ingredients together.
- In a smaller bowl, whisk together the coconut oil and maple, and then pour this liquid over the dry ingredients.
- Stir everything together until the oats and seeds are well coated.
- Pour the oat mixture onto a large parchment lined baking tray, spreading evenly. For an extra chunky result, make sure the oat mixture is not so spread that the oats aren't touching each other. Having the oats touch with the combo of oil and maple will make for some chunky, crunchy granola in the end.
- Bake for 20 to 30 minutes, until the granola starts to look golden.
- Pull baking sheet from the oven and allow to cool completely before breaking apart the granola.
- Store in an air tight container in the fridge for several weeks (if you can make it last that long — it's so yummy!!)
