I 100/10 recommend this recipe for peach cobbler inspired byPinch of Yum! It tastes like a cookie smooched some jammy peaches.
It’s my go to and I’ve made it a dozen times over the years. I simply adjust it to make it gluten free, vegan, and refined sugar free! Sometimes, when I’m feeling extra exciting, I like to double the cobbler topping because… why not?!
Peach Cobbler
Ingredients
- 4-6 large peaches (depending on preference of fruit to topping ratio), peeled and sliced sliced
- 1 teaspoon cinnamon (optional)
- ½ cup coconut oil
- ⅔ cup maple syrup
- 1 teaspoon vanilla
- 1 cup gluten free flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350° and lightly oil a 9×13" baking dish.
- Pour the prepared peaches and cinnamon, if using, into the pan and evenly spread.
- In a bowl, combine the remaining ingredients until a crumbly dough forms.
- Pour the dough-crumbles over the peaches and cover evenly.
- Bake in preheated oven for 45 minutes, or until peaches are bubble and topping begins to lightly brown.
- Let cool slightly and serve on its own or with ice cream or whipped topping.
