This Morning Sunrise Popsicle is one of the prettiest pops I’ve ever made! I named it after… well, the sunrise! And my kiddo. But that’s a whole story, and the consensus is that I get to the point in blog posts.
From a flavor standpoint, this is just delish. Mangos and strawberries? What more could you want? Especially if you’re making it in the middle of strawberry season. In Oregon. Have you had Oregon strawberries?! So good.
And just those flavs alone would be good enough. But the magic lies in the swirl action! You’ll make two distinct layers but then swirl it up in the popsicle molds to create an ombre look. It’s lovely!
MOLDS FOR YOUR MORNING SUNRISE POPSICLES
The popsicle mold you use will ultimately determine how many servings you end up with. The popsicle molds I use aren’t the magnum bar shaped or rectangular-shaped ones you see all over the internet. They are much bigger but are very cute! For the last decade, I have used smaller cylindrical-shaped ones from the dollar store that hold about 1/4 cup in each cavity. They are almost identical to the ones I grew up with. This is the closest I could find online for you as a comparison and actually made with better material than what I have. Classic! So cute. So fun.
Whatever mold you use, big or small, you will end of up with best morning sunrise popsicles and the flavor will be delivered straight to your happy little tastebuds!
Morning Sunrise Popsicles
Ingredients
Strawberry Layer
- 1 cup strawberries
- ¼ cup maple syrup
Mango Layer
- 1 cup mango
- ¼ cup maple syrup
- ½ cup nondairy milk (Forager's cashew yogurt is what I use)
Instructions
Strawberry Layer
- Blend together strawberries and maple syrup until smooth.
- Pour half way into popsicle molds or cups and set aside.
Mango Layer
- Blend together mangos, maple syrup, and yogurt until smooth.
- Fill the remaining space in popsicle molds with mango layer.
Swirl
- With a popsicle stick, gently swirl the two layers until you can see the colors blend into one another where the red meets yellow. If you are using a mold or cup that isn't transparent, just swirl gently for about 30 seconds. If the colors don't end up blending together as you hoped, don't worry. It will still taste great!
- Place filled molds/cups in freezer and freeze several hours or overnight until firm.
- Pop 'em out of the molds (I use hot water to loosen mine), and enjoy!
