How many of you thought I was done highlighting mango lassis when I made my OG post? Well SURPRISE!! You’ve not seen the end of this glorious flavor combo. Combining my favorite spice with one of the most succulent fruits on earth? There’s no way you’ve seen the end of this duo. Case in point, welcome my frozen friend: Mango Lassi Popsicles!
Isn’t she so smooth and sweet? Well, I guess you can’t really taste it via picture, but take my word for it. It’s all the satisfaction of the drink but in a super chill, grab-and-go-whenever-you-want form!
When making these, try to use frozen mangos vs fresh to help reduce the super icy feel to them. You can use fresh too — they just may lean more on the ice pop side when it comes to texture. Regardless, the flavor will be there! The creamy (I hate this word but I have no other descriptor) goodness comes from nondairy yogurt. I like this brand the best! There’s an extra heaping of cardamom in this because when foods are frozen, flavors tend to mellow quite a bit. Ya gotta up the spice game to match the mango lassi flavor profile.
Molds for your Mango Lassi Popsicles
The popsicle mold you use will ultimately determine how many servings you end up with. The popsicle molds I use aren’t the magnum bar shaped or rectangular-shaped ones you see all over the internet. They are much bigger but are very cute! For the last decade, I have used smaller cylindrical-shaped ones from the dollar store that hold about 1/4 cup in each cavity. They are almost identical to the ones I grew up with. This is the closest I could find online for you as a comparison and actually made with better material than what I have. Classic! So cute. So fun.
Whatever mold you use, big or small, you will end of up with best mango lassi popsicles and the flavor will be delivered straight to your happy little tastebuds!
Mango Lassi Popsicles
Ingredients
- 2 cups frozen mango
- 1 cup nondairy yogurt (I like using Forager's cashew yogurt)
- ½ cup maple syrup (you can use ⅓ cup if you've got super sweet mangos)
- 1 teaspoon ground cardamom
Instructions
- Place all the ingredients in a blender and blend until completely smooth. I like using a high-speed blender to get it super smooth, quickly!
- Pour into popsicle molds and freeze for several hours or overnight, until firm.
- Pop 'em out of the molds (I use hot water to loosen mine), and enjoy!
