Oh my goodness. This is the best thing and I just need to tell you. And it builds off of the familiar, just a mini twist. Chocolate Pudding Pops (aka fudge pops)!! They are the avocado chocolate pudding popsiclized — and oh my. The texture is so spot on.

If for some crazy reason you have leftover avocado chocolate pudding, this is the perfect way to use up the rest (as the pudding doesn’t really keep well — it’s got avocado after all).
Just make your avocado chocolate pudding with a little more sweetener and freeze in molds. It’s really that simple!
Why more sweetener you ask? Well, I’m no scientist but my childhood self remembers an experiment I did which ultimately demonstrated to me that sugar has a low freezing point which makes this more soft than icy.
Molds for Your Chocolate Pudding Pops
The popsicle mold you use will ultimately determine how many servings you end up with. The popsicle molds I use aren’t the magnum bar shaped or rectangular-shaped ones you see all over the internet. They are much bigger but are very cute! For the last decade, I have used smaller cylindrical-shaped ones from the dollar store that hold about 1/4 cup in each cavity. They are almost identical to the ones I grew up with. This is the closest I could find online for you as a comparison and actually made with better material than what I have. Classic! So cute. So fun.
Regardless of the mold you use, this fudgy chocolate pudding pop will hit the spot. It’s fun, nostalgic and so so good.!
Chocolate Pudding Pops
Ingredients
- 2 large avocados or 3 small avocados
- ¼ cup raw cashews soaked for 10 minutes in hot water or overnight in room temp water
- ⅓ cup cacao powder
- ½ cup maple syrup
- 1 tablespoon vanilla
- pinch of salt
Instructions
- In a high-speed blender, add avocado, raw cashews, cacao, maple, vanilla, and salt.
- Blend until completely smooth. This may take a little time but feel free to add 1-2 tablespoons of water if things aren’t getting smooth as can be. You shouldn’t see any flecks of cashews.
- Spoon the mixture into popsicle molds and freeze for at least 5 hours.
- When frozen, pop them out of the molds and enjoy the creamy, dreamy pudding pop of love!
