But sometimes “good” just needs a little extra something. Just a little dab of something on the side to take it to the next level. Well, I’ve got just the thing.
Cashew Date Caramel Cream!
It’s sweet, it’s smooth, and it’s really good for you! Can you say that about all caramel sauces? I mean, yes caramel sauces are all good for the soul but this one is good from entry point to… well… it’s just cleans ya on the inside, okay?
Made with just a few shelf-stable ingredients and a blender, you can literally make this anytime! So who are the star ingredients, you ask? Cashews and dates with an honorable mention to vanilla and salt. And then there’s the water — the hidden hero. The thing that makes this actually come together in the blender in a super smooth way.
Once this cashew date caramel cream is made, you can keep it in the fridge for about a week. And in that week’s time dollop, dip, drizzle, and spread to your heart’s content. This works for breakfasts, desserts, and snacks as you sip on a sweet bevvy on the side. Or you can sub the cashew butter filling in these butter cups with this caramel instead for a fun twist!

Cashew Date Caramel Cream
Ingredients
- 1 cup dates, soaked for 15 minutes in boiling water (or until soft) and drained
- ½ cup raw cashews, soaked overnight or in boiling water for 15 minutes, and drained
- 1 teaspoon vanilla
- ½ teaspoon salt
- ½ to 1 cup water (to thin out the caramel while blending)
Instructions
- Place dates, cashews, vanilla, and salt in blender along with ¼ cup of the water to get started. Begin blending.
- Gradually add more water between blending and scraping down the sides of the blender to keep things moving and get all the ingredients well incorporated and completely smooth. You may not use all of the water, depending on how dry or soft your dates originally were.
- Once smooth, transfer to a container and enjoy as a dip for fruit, frosted on top of brownies, dolloped on pancakes, and more!
