Make a single-serving CASHEW BUTTERCUP! With just a few items, it comes together quickly so you can take a sweet moment to yourself and reap the benefit of cashew’s mood-boosting ways.

Listen, the world is a tough place. But that doesn’t mean treating yourself has to be! If you’ve had a week, I strongly suggest taking a small pause, gathering a few ingredients and minutes, and putting together this delicious treat for yourself.

This cashew buttercup will come together in a jif and give you a moment of peace. All you need is chocolate, coconut butter, cashew butter, and date syrup!

This year I’ve tried carving a little more time to do the things that bring me life (like blogging my recipes) and dismissing more of the things that aren’t actually serving me. It will be a forever practice to learn these types of new habits, but I’m taking (baby) steps to commit to this. And hopefully in a year (or ten) I will find that the life-giving moments outweigh the drain. Because even if they are fewer and far between, the weight I assign the positive can still be much more than the inevitable “bleh” of life.

I think Donna and Tom were geniuses when they granted themselves a Treat Yo Self day.

I know treats don’t make hard things go away (oh how I wish this could be the opposite!), but taking time to treat yourself does add a little self-care and love to life. Sometimes we really need to take those moments to acknowledge our needs and feels. And that truly helps us keep on keeping on.

Cashew Buttercup

A cashew butter cup is just 15 minutes and a few ingredients away from your personal enjoyment!
Servings 1

Ingredients

  • 2 tablespoons chocolate coconut sugar sweetened is my personal preference
  • 1 teaspoon coconut butter
  • 1 tablespoon cashew butter
  • ½ teaspoon date syrup or maple syrup

Instructions

  • Coat a muffin liner with melted chocolate and place in freezer while preparing the filling.
  • In a separate bowl, combine the coconut butter, cashew butter, and date syrup until smooth.
  • Fill muffin liner with nut butter filling and gently tap on counter to level.
  • Cover the nut butter with the remaining melted chocolate.
  • Place in freezer for ten minutes or until all the chocolate is solidified.
  • Enjoy a moment of delight!
