These berry crumble bars are so fun and customizable! And they’re a great way to savor the fruity flavors of summer.

Berry Crumble Bars
Servings 12
Ingredients
Crust & Crumble
- 3/4 cup melted coconut oil
- 3/4 cup coconut sugar
- 1 cup oats
- 1 1/4 cups gluten free flour
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoons cinnamon
Filling
- 3 cups berries
- 0-2 tablespoons coconut sugar, based on sweetness preference
- 1 tablespoon tapioca flour
Instructions
Crust & Crumble
- Preheat oven to 350° and line an 8×8" baking pan with parchment paper.
- Mix crust + crumble ingredients together and press half the mixture into an prepped pan.
- Bake for 15 minutes while making the filling.
Filling
- Place berries and coconut sugar into a pan and heat until it starts to release some juice.
- Add in the tapioca flour, stirring immediately.
- Heat until bubbly and thick and pour filling over baked crust, spreading evenly.
- Top with remaining crumbly oat mixture.
- Bake for 20 or so minutes until the filling is bubbling and crumb topping is golden.
- Cool completely and serve!
