So… I’m moving. And I’ve come to a point where I need to use up some ingredients in my freezer and fridge. ‘Cause I don’t want to move them with me! But I don’t want to throw them away! And I don’t want to just throw them in a smoothie and be done. I want to make them shine. And this is the perfect thing to use up those old bananas you popped in the freezer and the bottom of the jar tahini you gotta use soon. Banana tahini bon bons! I don’t know if these are technically bon bons but they look like what I picture bon bons to look like — so we’re going with it.
Finish it off with some homemade flaky sea salt and you’ll have a sweet, salty treat to savor for the remainder of the summer! Try these banana tahini bon bons and let me know how you like them!
Banana Tahini Bon Bons
Ingredients
Banana Butter Nice Cream
- 3 frozen bananas
- ¼ cup tahini (or other nut/seed butter of choice)
- 1 teaspoon vanilla
Chocolate Shell
- 1 cup chocolate
- 1 tablespoon coconut oil
- flaky sea salt
Instructions
Banana Butter Nice Ice Cream
- In a food processor, blend the frozen bananas, tahini and vanilla until smooth. You could really eat this as is but wait, there's more!
- Form the nice cream into balls (either using a mold or ice cream scoop) and freeze until firm. I make these into 1-2" balls but you could make them smaller if you want them to be little nuggets instead.
Chocolate Shell
- Melt the chocolate and coconut oil in 30 second intervals in the microwave until melted. Or you can do this over a double broiler.
- When the nice cream balls are firmed up, dip them in the melted chocolate and set on parchment or wax paper.
- Immediately sprinkle with flaky sea salt. If you wait too long, the chocolate shell may start to harden and the salt won't stick.
- Pop them in the freezer until you're ready to enjoy.
