What is one of the most nostalgic but indulgent cookies of your childhood? Perhaps it’s chocolate chip cookies. BTW, I am not going to try to make this for you because Bakerita takes the cake, er cookie on this. Okay, well how about besides chocolate chip cookies?? Did you say no-bake cookies? Because that’s my answer! They’re so chocolatey, and you can reall sink your teeth in! I mean, I also find the cookies from a tin pretty nostalgic, but I digress.

The thing about no-bakes is that they are delicious and so easy and can be enjoyed in the summer without heating up the home! But here’s the other thing about no-bakes, they are laden with allergens and aren’t always suitable for people who can’t have everything but the kitchen sink.

Enter allergy-friendly no-bake cookies!

These use a lot of alternative ingredients and are still mindful of flavor. All the indulgence of no-bakes, without the tummy troubles (or however your body may react to an allergen).

No-Bake Cookies (Allergy-Friendly)

This dairy free, gluten free, peanut free and refined sugar free version of no-bake cookies is all the delish without the allergies! Make this nut free with sunflower seed butter and you've got an all around allergen free cookie!

Ingredients

  • ½ cup coconut oil
  • ¾ cup coconut sugar
  • ½ cup nondairy milk
  • ¼ cup cacao powder
  • ½ cup cashew butter (almond or sunflower seed butter work well too!)
  • 1 teaspoon vanilla
  • 3 cups quick-cooking oats
  • ¼ teaspoon salt (if your nut butter is unsalted)

Instructions

  • Line a couple baking sheets with parchment paper, and set aside.
  • Place the oats in a large bowl and set aside.
  • In a small pot, add the coconut oil, coconut sugar, milk, and cacao powder.
  • Heat on medium, stirring frequently making sure everything gets melty and combined.
  • Allow this to boil for a minute, while continuing to stir.
  • Remove from the heat, and add the cashew butter, vanilla, and salt (optional) and stir once more until smooth.
  • Pour the chocolate mixture over the oats and get mixing! Mix until every single oat is covered with the chocolate.
  • Now, scoop and plop 1-2 tablespoon sized drops onto the parchement paper until the oaty-choco mixture is gone.
  • Cool in the fridge until firm, and enjoy!
