I have an easy peasy no-bake treat — PALEO COOKIE DOUGH BITES!
What person who grew up eating chocolate chip cookies was never tempted by the dough? I’m sure you exist. But I’d like to talk about everyone else. Cookie dough was the ultimate guilty pleasure of childhood. Being told “no, you can’t eat that — you’ll get sick!” didn’t help! Well, now you’re an adult. You can do what you want — ha. BUT! If you’re an enneagram 6 who fears salmonella and/or have lost a little childhood whimsy that keeps you from such indulgences, this no-bake treat will help!
These little bites of sweetness are a quick and delish no-bake treat! Plus paleo cookie dough bites are actually easier than making regular cookie dough too. And these don’t harbor any potential bacteria from uncooked eggs or flour. Since they use maple as the sweetner, they’re on the lower end of the glycemic index (always a win!). And they have healthy fats (coconut oil) and protein (nut butt) to actually make it relatively healthy. If you choose to use maca powder in these, they’ll give you an extra burst of energy too.
I won’t call these “protein balls” because they’re not beefed up (get it?!!) with protein powder (I’ve noticed that trend over the last several years). But they do pack more protein than your average cookie dough concoction.
Paleo Cookie Dough Bites
Ingredients
- ½ cup almond butter
- ¼ cup coconut oil, softened
- 1 tablespoons maple syrup
- ½ teaspoon vanilla
- ¼ teaspoon salt (omit if your almond butter already has salt)
- 1 ½ cup almond flour
- 3 tablespoons maca powder (optional)
- ½ cup chocolate chips (I prefer coconut sugar sweetened)
Instructions
- Combine the almond butter, almond flour, coconut oil, maple syrup, and salt (and maca powder if using) until a dough forms.
- Fold in chocolate chips until well incorporated.
- Roll into 1" balls and chill until firm enough to hold. I have had them both when they're slightly firm, and completely chilled — both are great!
