Peach Chutney
Ingredients
- 2 large, ripe but firm peaches (or 4 smaller)
- 1 stick cinnamon
- 3 whole cloves
- 1 teaspoon ground cumin
- 1 teasooon coriander seeds
- 2-3 cardamom pods, cracked
- 1 cup water
- 1" knob of ginger, crushed
- 2 cloves garlic, smashed
- ½ cup apple cider vinegar
- ⅓ cup coconut sugar
- 2 teaspoons red pepper flakes
- ½ teaspoon black pepper
- 1 teaspoon salt
Instructions
- Cut the peaches into 1 inch cubes and cook on medium heat along with the spices, water, ginger and garlic until the peach is tender, about 10 to 15 minutes.
- Add the vinegar, coconut sugar, salt, and peppers. Don’t taste it yet, the flavors are still getting acquainted.
- Cook for about 30 to 45 minutes until the chutney is thickened. Remove the cinnamon stick, cloves, cardamom pods and ginger knob from the chutney. Taste & adjust seasonings as you wish.
- Pour into a sterilized jar while still hot. Cover with a lid and boil in a water bath for about 15 minutes. Store with your canned goods. But once you pop that top, keep it in the fridge!
- Enjoy this sweet & spicy addition to your food!
