Want to have pudding without having any weird dairy reaction? Or overloading on carbs or sugar? Or, or? Well I have the perfect thing that sacrificed ZERO on taste, flavor, and consistency. AVOCADO CHOCOLATE PUDDING!
This pudding is the best of the best. And no one will ever know it has avocados — unless they read this recipe. Seriously. I’ve shared this with people who literally hate avocado and they have enjoy this pudding!
The avocados are the star here — but you’d never realize it. They lend a thick, creamy, dreamy texture. Plus they provide some seriously healthy fat that your body will really appreciate. I always think of this cute cartoon when I think of fatty avocados.
Just a handful of simple ingredients make this magical pudding of delight: cashews, avocados, maple, cacao (although I’m sure cocoa powder would work too!), and vanilla. Blend it all together until completely smooth, chill and serve. It’s one reeeeeeeally huge serving or four little ones. All depends on the mood.

Avocado Chocolate Pudding
Ingredients
- 2 large avocados or 3 small avocados
- ¼ cup raw cashews, soaked for 10 minutes in hot water or overnight in room temp water
- ⅓ cup cacao powder
- ¼ cup maple syrup
- 1 tablespoon vanilla
- pinch of salt
Instructions
- In a high-speed blender, add avocado, raw cashews, cacao, maple, vanilla, and salt.
- Blend until completely smooth. This may take a little time but feel free to add 1-2 tablespoons of water if things aren't getting smooth as can be. You shouldn't see any flecks of cashews.
- Pour into a glass container and pop in the fridge for several hours until complete chilled.
- Serve by the heaping spoonful and enjoy!
