If you like my pecan butter, you’re gonna wanna stick around for this! It’s an easy walnut butter, and it’s sweet, smooth, and satisfying. It will fill you up with its omega-3 fatty goodness with every scrumptious bite. And added bonus, it’s so easy to whip up.
Just toast your walnuts with cashews (which give the nut butter a little more body… plus you don’t have to ask me twice to include cashews in anything). Then process until smooth, adding vanilla, cinnamon, and salt along the way. Finally, add in your raw honey (to balance out the bitterness you’ll find with the skins on your walnuts) and you’ve got a beautiful butter to enjoy thoroughly!
You can eat this walnut butter with toast, dip your apples in it, or just eat it by the spoonful — yes it is that good.
Walnut Butter
Ingredients
- 2 cups raw walnuts
- 1 cup raw cashews
- ½ teaspoon vanilla powder or 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 2 tablespoons raw honey
- ¼ teaspoon salt
Instructions
- Preheat the oven to 325°.
- Place the walnuts and cashews on a baking sheet and roast in oven for about 8 to 10 minutes. Allow to cool completely.
- To a food processor, add walnuts and cashews, and being processing (this will take some time). You will go through phases in grinding your nut butter. First, you’ll see a the nuts break down be coarse, then a fine powder. Keep going! It will eventually start looking like a “dough.” Keep processing! After it’s gone past the dough-ball phase, you will start seeing the nut butter transform into a smooth nut butter consistency. You’ve just gotta keep processing! You can give your machine breaks every now and then to ensure it doesn’t overheat.
- Once it’s turned into butter, add in the rest of the ingredients and process until everything is well incorporated together.
- Now you can use it on your toast, apples, sandwiches, oatmeal, or just eat it by the omega-3 filled spoonful!
- Store in a jar in the fridge for about a month.
