One of the simplest popsicles you can make is this strawberry smoothie popsicle. It holds that classic flavor you get with beautifully blended strawberries and a little extra tartness and creaminess.
If you have picked or purchased a bundle of strawbs that you’ve needed to pop in the freezer to keep from spoiling, this is a recipe for you! If you haven’t done any of that, this is also for you! You can just go on to the store and grab a bag of frozen strawberries. Ba-da-bing!
These strawberry smoothie popsicles have just four ingredients but the combination makes for a creamy, dreamy, flavor-filled end result. You might be looking at this recipe and thinking there’s a little too much maple for your liking, but trust me. Unless you have the sweetest, juiciest strawberries in the universe, adding some sweetener will help! When foods are frozen, flavors tend to be muted. So adding some extra sweetness will make it taste perfect when in its solid state.
Plus! Maple has a lower freezing point so using this actually helps prevent your pop from becoming straight up flavory ice. There’s a time and place for ice pops. Just not in this recipe.
Molds for your Strawberry Smoothie Popsicles
Like I shared with my mango lassi popsicles, the popsicle mold you use will ultimately determine how many servings you end up with. The popsicle molds I use aren’t the magnum bar shaped or rectangular-shaped ones you see all over the internet. They are much bigger but are very cute! For the last decade, I have used smaller cylindrical-shaped ones from the dollar store that hold about 1/4 cup in each cavity. They are almost identical to the ones I grew up with. This is the closest I could find online for you as a comparison and actually made with better material than what I have. Classic! So cute. So fun.
However you go about freezing these cuties up (you can even use a paper cup!), I hope you give it a try with the berries treasures of the summer (or your local grocery)!
Strawberry Smoothie Popsicles
Ingredients
- 2 cups frozen strawberries
- ½ cup fresh lemon juice
- ½ cup nondairy yogurt (I like Forager brand)
- ½ cup maple syrup
Instructions
- Blend all of the ingredients in a blender.
- Pour into popsicle molds, placing the stick in as well.
- Freeze overnight or until frozen solid.
- Run the outside of the mold under hot water to loosen popsicles, release and enjoy!
