Have you heard of butterfly pea flower? It is dried flowers that when steeped in boiling water produce a magnificent, deep blue color. The color in and of itself is enchanting.
Now as if that wasn’t enough, when you add lemon to tea made of butterfly pea flower a transformation occurs — the pH of the lemon mixes with the tea and VOILA!!
An amazing purple color begins to take over. It’s truly magical!
But wait, there’s more. From what I understand, this butterfly magic is very good for the body — helping regulate blood sugar being my favorite one listed on the internet because when my levels are off, it is not pretty, people!

Butterfly Pea Flower Magic Tea
Ingredients
- 1 teaspoon dried butterfly pea flowers
- 1 cup boiling hot water
- 1 tablespoon pure maple syrup or honey (optional)
- 1 lemon
Instructions
- Steep butterfly pea flowers in hot water for 15 minutes, until a brilliant blue hue
- Strain and if using a sweetener, add to strained tea and dissolve fully
- Cool tea
- Juice the lemon and remove any seeds (strain if you prefer no pulp)
- In a glass, fill with ice and follow it with the cooled butterfly pea flower tea
- Take the lemon juice and slowly pour into the glass of iced tea — and watch the magic happen right before your eyes!
- Adjust sweetness according to preference, and enjoy this cool, refreshing drink!
